Health conference. "Eating, Producing, Choosing", this conference takes you on a journey through a century of food history. We discover how, in its quest to feed itself, humanity has built one of the most powerful systems on the planet. But also the most fragile on the planet. The conference opens like a journey through time: from the Neolithic Age to the agricultural revolutions, from fertile soils to thermal machines, from subsistence farmers to globalised industries. The findings are backed up by data from the FAO, ADEME and the IPCC: 30% of greenhouse gas emissions come from our food, 11 hectares of land disappear every hour in Europe, and ten companies now control most of the world's seeds. But the story doesn't stop at these figures. Through maps, images and analyses, another perspective also emerges: that of a more sober, fairer and more resilient food system. A dynamic driven by agro-ecology, relocation, short supply chains and more responsible consumption. The participants leave with a strong conviction: transforming the system starts with understanding its interconnections. Every meal then becomes a political, ecological and collective act - a real lever for transforming our daily lives.
